This poor blog is probably suffering from separation anxiety by now. Once again, Jill must sincerely apologize for her absence.  I don't know what life is like where you are, but there has been a nasty plague spreading around these here parts. Of course, I couldn't miss out on that fun! So I was out of commission for most of last week, and then working like a mad woman on the days I wasn't, just to make up for lost time. So sad, little blog suffered along with me.

Tell me, who watched The Bachelor last night? Every time I have watched it this season I have yelled at the screen one or more of the below comments:

"What?! Why would you wear that?!"

"Ben, I liked you on The Bachelorette... what happened?!"

"I can't take this anymore!!!!"

To those around me - "SShhhh... can't hear.... rewind"

"Courtney is crazy!"

While pulling at hair - "No, seriously! I can't take this!"

So as you can see, I have a love hate relationship with this show.  But it just sucks you right in and you can't get it out.  Drama, drama, drama (name that movie!)... So when I have so much Bachelor in my life, I need something drama-free.  Say, something like a 4 ingredient meal? Enter Baked Eggs.

Jill is a BIG fan of eggs... poached, scrambled, over-medium, omletted.... frittata-ed I know those last two aren't real verbs, but go with me on this.  Eggs are delicious, and baked eggs are ridiculously easy to make.  Not only that, but it's an endless creation.... you are only limited by what you can think of for ingredients.

So get crackin'! Ha! Pun intended! And get your eggs on!

Baked Eggs with Spinach and Prosciutto

Makes 1 serving

Ingredients:

  • Heaping handful of fresh spinach, washed and dried
  • 2 Whole Eggs
  • 1 Egg White
  • 1 slice of Prosciutto
Preheat oven to 350 degrees.  Take a ramekin or small oven-safe bowl, and grease lightly with some cooking oil.  In a medium frying pan over medium flame, heat about 1 teaspoon of olive oil.  Place your spinach in the pan and saute until wilted, approximately 2 minutes.  Once wilted, place your wilted spinach at the bottom of the greased, oven-safe bowl or ramekin. In a separate bowl, crack your eggs.  Pour your cracked eggs into the oven-safe bowl over the spinach.  Lay your slice of prosciutto on top of the eggs.  Place your bowl onto a cookie sheet and then into the oven.  Bake for approximately 17-20 minutes, or until the whites are firm.  The goal is for the whites to be cooked and the yolks to be mostly runny.
