The Last Minute Cookie...

It has been cold, rainy, and miserable.... BOO.

There is an upside though. Cold, rainy weather makes me want to cuddle up on the couch in my sweats with a hot beverage and a sweet treat. But I only had 30 minutes to make anything before I had some friends over for Girls Night. What to make?!

Flourless Peanut Butter cookies.  Let's chat about these little delights.  Literally, I found the recipe and had the cookies out of the oven all within 30 minutes.  How great is that?!  

 

You know what else is great? For all of you people out there who gave up sweets for Lent, these are pretty much just peanut butter... they aren't "dessert!"  They're a snack!  Just something to think about.

Flourless Peanut Butter Cookies

Ingredients:

  • 1 cup natural peanut butter (mine was chunky)
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 egg

Preheat the oven to 350 degrees.  Line a baking pan with parchment paper.

With a mixer, combine the sugar and peanut butter until well incorporated. Add the egg and baking soda and mix for another 2 minutes.

Roll the dough into walnut sized balls.  Press the flatside of a fork onto the tops of the balls to make the lines.

Bake for about 10-12 minutes. Let cool on baking sheet for 5 minutes.  Enjoy!
